I'm trying to run a web, an ftp and a CS:S server on an old computer just fit for the job. This means I have to open ports 80, 21 and 27015! But, I have no router. This should mean that it should work, if I give it permission via the firewall. I'm using Win 2K Pro, does it have a built-in firewall or something that would block the ports, that I could open? Or do I have to install a firewall and allow the ports.

I dont think WIN2k has any firewall's unless it was recently released with service pack 19 or whatever they are on. Does your modem has a firewall? Check with the manufacturers owers manual. Thn just ask a friend to ping you and see if they get a response.
