I've got an asus P4S800D-X main board and am running XP Pro.
I want to be able to record conversation via microphone onto my computer. I assume I just need software and a microphone?
My ideal setup would be to have a quick launch button I can click and start recording..
any advice on how to do this?

Well you need some recording software and a mic as you said.Google "recording software" and you will get lots of results. You can even use the Windows Sound Recorder.

Use audio/ Mp3 recorder like FlexiMusic Wave Editor for recording the conversations and about microphone, prefer a microphone with unidirectional pick up sound.

Audacity is another nice program you might want to consider.

Yup, and it's free.
The other thing you gotta remember is to set your Volume Control's Recording Properties check box to Microphone, as well as in your recording software. In Audacity, this is in a dropdown box on the main screen.
