Quick question,

The cat5e cables, are they using the Analogue or digital signal?

also the Coaxial cables, what do they use?

Cate5 cables are Digital 100% only an old modem for Dial up used analog signals.

I believe coaxial cables from the ISP for TV/Internet can use both...

a cable is a cable, it could be either digital or analog depending on the applied input. I use cat5 cables for many electronics projects (bots mainly) and they work great at low voltage analog signals.
