I don't see why it wouldn't... I've not seen one that small, but it should be like any other external/USB sound card.

Could I plug my headphone jack into the motherboard headphone port but the mic jack into the usb mic port and it will work?

And if it would work, then would the sound quality be ok

Yeah, if it comes with software disable the headphone jack, there has to be some way to do that.
