So I have a Intel Core i9-12900KS. It says its compatible with DDR5-4800. What would happen if I used 6000 MHZ ram sticks?
6000 MHZ or 4800 MHZ?

You'd need another motherboard.
The platforms are largely on parity, although the shortage and expense of DDR5 doesn't really gain you too much at this point. Some workloads see an improvement, but I don't feel that it's really enough to justify the expense.

It would run at the highest speed aka 4800.
